A comforting dish made with savory ground lamb and vegetables, topped with creamy mashed potatoes, then baked until golden and bubbling. This traditional meal is rich, satisfying, and perfect for any day of the week.
Ingredients
For the meat filling:
- 1 tablespoon olive oil
- 1 pound ground lamb (or substitute with ground beef)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 1/2 cup frozen peas
- 1/2 cup frozen corn (optional)
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1/2 cup beef broth
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon all-purpose flour (for thickening)
For the mashed potato topping:
- 2 pounds potatoes, peeled and chopped
- 4 tablespoons butter
- 1/2 cup milk (or more as needed)
- Salt and pepper to taste
- Optional: 1/2 cup shredded cheddar cheese (for a cheesy topping)
Directions
- Make the mashed potatoes:
Place potatoes in a large pot, cover with salted water, and boil until tender (about 15-20 minutes). Drain, then mash with butter and milk until smooth and creamy. Season with salt and pepper. Set aside. - Cook the filling:
In a large skillet, heat olive oil over medium heat. Add diced onion and carrots and cook until softened (5-6 minutes). Add garlic and cook for 1 more minute. - Add the meat:
Add ground lamb to the skillet. Cook until browned and cooked through, breaking it apart with a spatula. - Flavor the mixture:
Stir in tomato paste, Worcestershire sauce, thyme, salt, and pepper. Sprinkle flour over the meat and stir well. Pour in beef broth and simmer for 5-6 minutes, until thickened. Stir in peas and corn. Remove from heat. - Assemble the pie:
Preheat oven to 400°F (200°C). Transfer the meat mixture to a baking dish and spread it evenly. Top with the mashed potatoes, spreading gently to cover the filling completely. Use a fork to create texture on top for a crispy finish. Sprinkle with cheese if desired. - Bake:
Bake for 20-25 minutes, or until the top is golden brown and the filling is bubbling around the edges. Broil for 2-3 minutes at the end for extra crispiness if desired. - Serve:
Let it cool slightly before serving. Serve with a simple green salad or crusty bread for a full meal.
