Roasted Red Pepper, Spinach, and Mozzarella Stuffed Chicken

Tender chicken breasts filled with sweet roasted red peppers, fresh spinach, and gooey mozzarella, then baked to juicy perfection. A savory, satisfying main dish!


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach (lightly sautéed or wilted)
  • 1/2 cup roasted red peppers (sliced, from jar or homemade)
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Toothpicks or kitchen twine (to secure chicken)

Directions

  1. Preheat oven:
    Preheat your oven to 375°F (190°C).
  2. Prepare the chicken:
    Using a sharp knife, carefully slice a pocket into each chicken breast—do not cut all the way through.
  3. Stuff the chicken:
    Inside each pocket, layer sautéed spinach, roasted red pepper slices, and shredded mozzarella. Secure the opening with toothpicks or tie with kitchen twine.
  4. Season:
    Brush chicken with olive oil and season all over with garlic powder, Italian seasoning, salt, and pepper.
  5. Sear (optional but recommended):
    In an oven-safe skillet, sear chicken over medium-high heat for 2–3 minutes per side to get a golden crust.
  6. Bake:
    Transfer skillet to oven (or place chicken in a baking dish) and bake for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  7. Rest and serve:
    Let rest for 5 minutes before removing toothpicks. Slice and serve hot!
