Apple Crumble Cheesecake

A luscious layered dessert featuring a buttery graham cracker crust, silky cheesecake filling, warm spiced apples, and a golden cinnamon crumble topping. Every bite is pure heaven!


Ingredients

For the crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the cheesecake filling:

  • 3 (8 oz) packages cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream

For the apple layer:

  • 2 large apples, peeled, cored, and diced (Granny Smith or Honeycrisp work great)
  • 2 tablespoons butter
  • 2 tablespoons brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

For the crumble topping:

  • 1/2 cup flour
  • 1/2 cup old-fashioned oats
  • 1/2 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 cup unsalted butter, cold and cubed

Directions

  1. Make the crust:
    Preheat oven to 325°F (163°C). Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch springform pan. Bake for 10 minutes, then set aside.
  2. Cook the apples:
    In a skillet over medium heat, melt butter. Add diced apples, brown sugar, cinnamon, and nutmeg. Cook until soft and caramelized, about 5–7 minutes. Set aside to cool.
  3. Prepare the cheesecake filling:
    In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well. Stir in vanilla and sour cream until fully combined.
  4. Assemble:
    Pour cheesecake batter over crust. Spoon the apple mixture evenly over the top.
  5. Make the crumble topping:
    In a bowl, mix flour, oats, brown sugar, and cinnamon. Cut in the cold butter with a fork or pastry cutter until crumbly. Sprinkle over the apples.
  6. Bake:
    Bake for 50–60 minutes, or until the center is set. Cool completely, then refrigerate at least 4 hours (preferably overnight).
  7. Serve:
    Slice and serve chilled or at room temp. Optional: drizzle with caramel sauce for an extra treat!
