This creamy and indulgent Crock Pot Crack Potato Soup is a comforting bowl of goodness! Packed with tender potatoes, crispy bacon, and a rich, cheesy broth, it’s the perfect soup for chilly days or when you’re craving something extra cozy. It’s a hands-off recipe that delivers big on flavor!

Ingredients

  • 4 cups peeled and diced potatoes (about 5-6 medium potatoes)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 packet ranch seasoning mix
  • 1 block (8 oz) cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup cooked bacon, crumbled (about 8 slices)
  • 1/2 cup green onions, chopped (optional for garnish)
  • Salt and pepper, to taste

Directions

  1. Prepare the Ingredients:
Wash, peel, and dice the potatoes into small cubes. Chop the onion and garlic, then crumble the cooked bacon.
  2. Layer in the Crock Pot:
In the Crock Pot, add the diced potatoes, chopped onion, minced garlic, chicken broth, and ranch seasoning mix. Stir everything to combine.
  3. Cook the Soup:
Cover the Crock Pot and cook on low for 7-8 hours or on high for 3-4 hours, until the potatoes are tender.
  4. Add the Cream Cheese and Sour Cream:
Once the potatoes are soft, cut the cream cheese into chunks and add it to the soup along with the sour cream. Stir well to melt the cream cheese and make the soup creamy.
  5. Mash the Potatoes:
Use a potato masher to mash some of the potatoes right in the Crock Pot for a thicker, heartier texture, leaving some potatoes whole for texture. If you prefer a smoother soup, you can blend it with an immersion blender.
  6. Add the Bacon and Cheese:
Stir in the crumbled bacon and shredded cheddar cheese. Let the soup cook for an additional 10-15 minutes until the cheese is melted and everything is well combined.
  7. Serve:
Ladle the soup into bowls and top with chopped green onions, extra bacon, or more cheese if desired.
