Crispy on the outside, creamy and fruity on the inside! These Blackberry Cream Cheese Egg Rolls are a sweet twist on a classic, perfect as a dessert or indulgent snack.
Ingredients
- 8 egg roll wrappers
- 1 cup fresh or frozen blackberries
- 1/4 cup granulated sugar
- 1 tsp lemon juice
- 1 tsp cornstarch
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- Vegetable oil (for frying)
- Optional: powdered sugar, for dusting
Directions
Step 1: Make the Blackberry Filling
- In a small saucepan over medium heat, combine blackberries, granulated sugar, and lemon juice.
- Cook until the berries release their juices, about 3–5 minutes.
- Stir in cornstarch and simmer until thickened. Remove from heat and cool.
Step 2: Prepare the Cream Cheese Mixture
- In a bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
Step 3: Assemble the Egg Rolls
- Lay an egg roll wrapper on a clean surface, with a corner facing you (diamond shape).
- Spread about 1 tbsp of the cream cheese mixture in the center.
- Add about 1 tbsp of the blackberry filling on top.
- Fold the bottom corner up over the filling, then fold in the sides, and roll tightly.
- Seal the tip with a bit of water.
Step 4: Fry the Egg Rolls
- Heat about 2 inches of vegetable oil in a pan over medium heat (350°F / 175°C).
- Fry egg rolls in batches for 2–3 minutes per side, or until golden brown and crispy.
- Drain on paper towels.
Step 5: Serve
- Dust with powdered sugar if desired. Serve warm and enjoy!
