Blackberry Cream Cheese Egg Rolls

Crispy on the outside, creamy and fruity on the inside! These Blackberry Cream Cheese Egg Rolls are a sweet twist on a classic, perfect as a dessert or indulgent snack.


Ingredients

  • 8 egg roll wrappers
  • 1 cup fresh or frozen blackberries
  • 1/4 cup granulated sugar
  • 1 tsp lemon juice
  • 1 tsp cornstarch
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • Vegetable oil (for frying)
  • Optional: powdered sugar, for dusting

Directions

Step 1: Make the Blackberry Filling

  1. In a small saucepan over medium heat, combine blackberries, granulated sugar, and lemon juice.
  2. Cook until the berries release their juices, about 3–5 minutes.
  3. Stir in cornstarch and simmer until thickened. Remove from heat and cool.

Step 2: Prepare the Cream Cheese Mixture

  1. In a bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.

Step 3: Assemble the Egg Rolls

  1. Lay an egg roll wrapper on a clean surface, with a corner facing you (diamond shape).
  2. Spread about 1 tbsp of the cream cheese mixture in the center.
  3. Add about 1 tbsp of the blackberry filling on top.
  4. Fold the bottom corner up over the filling, then fold in the sides, and roll tightly.
  5. Seal the tip with a bit of water.

Step 4: Fry the Egg Rolls

  1. Heat about 2 inches of vegetable oil in a pan over medium heat (350°F / 175°C).
  2. Fry egg rolls in batches for 2–3 minutes per side, or until golden brown and crispy.
  3. Drain on paper towels.

Step 5: Serve

  • Dust with powdered sugar if desired. Serve warm and enjoy!
