Rustic Country Chicken Stew

A hearty, comforting stew made with tender chicken, rustic vegetables, and savory herbs. This one-pot wonder is perfect for chilly evenings or when you need a nourishing, home-cooked meal that tastes like it’s straight from grandma’s kitchen.


Ingredients

  • 2 tbsp olive oil
  • 1 ½ lbs boneless, skinless chicken thighs or breasts, cut into chunks
  • Salt and pepper, to taste
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 3 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 2 potatoes, peeled and cubed
  • 1 parsnip, peeled and chopped (optional)
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 tbsp tomato paste
  • 4 cups chicken broth
  • 1 cup frozen peas
  • 2 tbsp fresh parsley, chopped (for garnish)

Directions

Step 1: Brown the Chicken

  1. Heat olive oil in a large Dutch oven or soup pot over medium-high heat.
  2. Season the chicken with salt and pepper. Add to the pot and brown on all sides (about 5–6 minutes). Remove and set aside.

Step 2: Sauté the Vegetables

  1. In the same pot, add onions and garlic. Cook until fragrant, about 2 minutes.
  2. Add carrots, celery, potatoes, and parsnip. Sauté for 5 minutes, stirring occasionally.

Step 3: Build the Flavor

  1. Stir in thyme, rosemary, and tomato paste. Mix well to coat the vegetables.
  2. Return the chicken to the pot and pour in the chicken broth. Bring to a boil.

Step 4: Simmer

  1. Reduce heat to low, cover, and simmer for 35–40 minutes, until chicken is tender and veggies are cooked through.

Step 5: Finish & Serve

  1. Stir in the peas and simmer for another 5 minutes.
  2. Adjust seasoning with salt and pepper to taste.
  3. Garnish with fresh parsley and serve warm with crusty bread.
