- 2 tbsp olive oil
- 1 ½ lbs boneless, skinless chicken thighs or breasts, cut into chunks

- 3 garlic cloves, minced
- 3 carrots, peeled and sliced
- 3 celery stalks, sliced
- 2 potatoes, peeled and cubed

- 1 tsp dried rosemary
- 2 tbsp tomato paste
- 4 cups chicken broth
- 1 cup frozen peas
- 2 tbsp fresh parsley, chopped (for garnish)
Directions
Step 1: Brown the Chicken
- Heat olive oil in a large Dutch oven or soup pot over medium-high heat.
- Season the chicken with salt and pepper. Add to the pot and brown on all sides (about 5–6 minutes). Remove and set aside.
Step 2: Sauté the Vegetables
- In the same pot, add onions and garlic. Cook until fragrant, about 2 minutes.
- Add carrots, celery, potatoes, and parsnip. Sauté for 5 minutes, stirring occasionally.
Step 3: Build the Flavor
- Stir in thyme, rosemary, and tomato paste. Mix well to coat the vegetables.
