Ingredients:
For the Birria:
- 2 pounds beef stew meat (such as chuck roast), cut into chunks
- 1 onion, roughly chopped
- 4 cloves garlic, minced
- 3 dried guajillo chilies, seeds and stems removed
- 2 dried ancho chilies, seeds and stems removed
- 2 cups beef broth
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon ground cloves
- Salt and pepper to taste
For the Tacos:
- Corn tortillas
- Chopped fresh cilantro
- Diced white onion
- Lime wedges
- Sliced radishes (optional)
Instructions:
- Heat a dry skillet over medium-high heat. Toast the dried guajillo and ancho chilies for about 1-2 minutes on each side until they become fragrant. Be careful not to burn them.
- Remove the chilies from the skillet and place them in a bowl. Cover them with hot water and let them soak for about 15-20 minutes until they become soft.
- While the chilies are soaking, season the beef chunks with salt and pepper.
- In a large pot or Dutch oven, heat a bit of oil over medium-high heat. Add the beef chunks and sear them until browned on all sides. Remove the beef from the pot and set it aside.
- In the same pot, add the chopped onion and minced garlic. Sauté for a few minutes until the onion becomes translucent.
- Remove the soaked chilies from the water, reserving the soaking liquid. Place the chilies in a blender along with the beef broth, dried oregano, ground cumin, ground coriander, ground cloves, and some of the reserved chili soaking liquid. Blend until you have a smooth sauce.
- Return the seared beef to the pot and pour the blended birria sauce over it.
- Bring the mixture to a simmer, then reduce the heat to low. Cover the pot and let it simmer for about 2-3 hours or until the beef is tender and shreds easily.
- Once the beef is cooked, use two forks to shred it into the birria sauce.
- To serve, warm the corn tortillas on a griddle or skillet. Place some shredded beef birria onto each tortilla and fold it in half.
- Garnish the tacos with chopped fresh cilantro, diced white onion, and a squeeze of lime juice. You can also add sliced radishes for extra crunch and flavor.
