Beef Birria Tacos

Beef birria tacos are a delicious and savory Mexican dish that features tender beef cooked in a flavorful birria sauce and served in warm tortillas. Birria is known for its rich, spiced, and slightly tangy broth that the meat is simmered in. Here’s a recipe to make beef birria tacos:

Ingredients:

For the Birria:

  • 2 pounds beef stew meat (such as chuck roast), cut into chunks
  • 1 onion, roughly chopped
  • 4 cloves garlic, minced
  • 3 dried guajillo chilies, seeds and stems removed
  • 2 dried ancho chilies, seeds and stems removed
  • 2 cups beef broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon ground cloves
  • Salt and pepper to taste

For the Tacos:

  • Corn tortillas
  • Chopped fresh cilantro
  • Diced white onion
  • Lime wedges
  • Sliced radishes (optional)

Instructions:

  1. Heat a dry skillet over medium-high heat. Toast the dried guajillo and ancho chilies for about 1-2 minutes on each side until they become fragrant. Be careful not to burn them.
  2. Remove the chilies from the skillet and place them in a bowl. Cover them with hot water and let them soak for about 15-20 minutes until they become soft.
  3. While the chilies are soaking, season the beef chunks with salt and pepper.
  4. In a large pot or Dutch oven, heat a bit of oil over medium-high heat. Add the beef chunks and sear them until browned on all sides. Remove the beef from the pot and set it aside.
  5. In the same pot, add the chopped onion and minced garlic. Sauté for a few minutes until the onion becomes translucent.
  6. Remove the soaked chilies from the water, reserving the soaking liquid. Place the chilies in a blender along with the beef broth, dried oregano, ground cumin, ground coriander, ground cloves, and some of the reserved chili soaking liquid. Blend until you have a smooth sauce.
  7. Return the seared beef to the pot and pour the blended birria sauce over it.
  8. Bring the mixture to a simmer, then reduce the heat to low. Cover the pot and let it simmer for about 2-3 hours or until the beef is tender and shreds easily.
  9. Once the beef is cooked, use two forks to shred it into the birria sauce.
  10. To serve, warm the corn tortillas on a griddle or skillet. Place some shredded beef birria onto each tortilla and fold it in half.
  11. Garnish the tacos with chopped fresh cilantro, diced white onion, and a squeeze of lime juice. You can also add sliced radishes for extra crunch and flavor.

Beef birria tacos are traditionally served with a cup of the flavorful birria broth for dipping. Enjoy these delicious and savory tacos with their rich, spicy flavor!
