MEXICAN Arroz Con Leche

Mexican Arroz con Leche is a sweet and creamy rice pudding dessert that’s a beloved treat in Mexican cuisine. It’s made with rice, milk, sugar, and aromatic spices like cinnamon and vanilla. Here’s a simple recipe to make this delicious dessert:

Ingredients:

  • 1 cup long-grain white rice
  • 4 cups whole milk
  • 1 cup water
  • 1 cinnamon stick
  • 1/2 cup granulated sugar (adjust to taste)
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • Ground cinnamon, for garnish (optional)
  • Raisins, for garnish (optional)

Instructions:

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. In a large saucepan, combine the rinsed rice, milk, water, and cinnamon stick. Bring the mixture to a boil over medium-high heat, then reduce the heat to low, cover the saucepan, and let it simmer for about 20-25 minutes. Stir occasionally to prevent the rice from sticking to the bottom of the pan.
  3. Once the rice is tender and the mixture has thickened, remove the cinnamon stick and discard it.
  4. Stir in the granulated sugar, vanilla extract, and a pinch of salt. Continue to cook the mixture over low heat for an additional 10-15 minutes, or until it reaches your desired consistency. Keep in mind that the arroz con leche will thicken further as it cools, so it’s okay if it’s a bit runny when you turn off the heat.
  5. Remove the saucepan from the heat and let the arroz con leche cool for a few minutes.
  6. Serve the arroz con leche warm or chilled in individual bowls or cups.
  7. If desired, garnish each serving with a sprinkle of ground cinnamon and a few raisins before serving.
  8. Enjoy your homemade Mexican Arroz con Leche!

Arroz con Leche can be served as a comforting dessert or even as a sweet breakfast treat. It’s a delightful combination of creamy, sweet, and fragrant flavors that are sure to please your taste buds.
