Fudgy Oreo Cookie Bars

These rich and fudgy Oreo cookie bars are the ultimate treat for cookies-and-cream lovers! Packed with chocolate, stuffed with Oreos, and topped with even more cookie crunch — every bite is pure indulgence.


Ingredients

  • 1 cup (2 sticks) unsalted butter, melted
  • 1 ½ cups brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 ⅓ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • ½ tsp salt
  • 1 tsp baking powder
  • 20 Oreo cookies, roughly chopped
  • ¾ cup semi-sweet chocolate chips
  • Optional: extra Oreos and chocolate chips for topping

Directions

  1. Preheat Oven:
    Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or lightly grease it.
  2. Mix Wet Ingredients:
    In a large bowl, whisk together melted butter, brown sugar, and granulated sugar. Add eggs and vanilla extract, whisking until smooth.
  3. Add Dry Ingredients:
    Stir in flour, cocoa powder, salt, and baking powder until just combined — do not overmix.
  4. Fold in Goodies:
    Gently fold in chopped Oreos and chocolate chips. The batter will be thick and fudgy.
  5. Bake:
    Spread the batter evenly into the prepared pan. Top with extra chopped Oreos and chocolate chips if desired.
    Bake for 25–30 minutes, or until the center is set and a toothpick comes out with a few moist crumbs.
  6. Cool & Slice:
    Let cool completely in the pan before slicing into bars. For cleaner cuts, chill in the fridge for 30 minutes before slicing.
