Ingredients
- 2 cups cold leftover mashed potatoes
- 1 large egg
- 1 cup shredded cheddar cheese (or cheese of choice)
- ¼ cup grated Parmesan cheese
- ¼ cup chopped green onions (optional)
- ¼ tsp garlic powder
- Salt and pepper, to taste
- ¼ cup all-purpose flour (or as needed for binding)
- Oil or butter, for greasing muffin tin or pan
Directions
- Preheat Oven:
Preheat oven to 400°F (200°C). Lightly grease a muffin tin or line with silicone cups. - Mix the Filling:
In a large bowl, combine mashed potatoes, egg, cheddar cheese, Parmesan, green onions, garlic powder, salt, and pepper. Mix until well combined. - Add Flour:
Stir in flour, a little at a time, until the mixture holds together and is scoopable (you may need a bit more or less depending on how wet your mashed potatoes are). - Scoop into Muffin Tin:
Spoon the mixture evenly into prepared muffin cups, pressing gently to pack them down a little. - Bake:
Bake for 25–30 minutes or until golden brown and crispy on the edges. - Cool & Serve:
Let cool for 5 minutes before removing from the tin. Serve warm with sour cream or your favorite dipping sauce!
