Leftover Mashed Potato Cheese Puffs

Crispy on the outside, fluffy and cheesy on the inside — these puffs are a genius way to use up leftover mashed potatoes and turn them into a golden, savory snack or side dish everyone will devour.


Ingredients

  • 2 cups cold leftover mashed potatoes
  • 1 large egg
  • 1 cup shredded cheddar cheese (or cheese of choice)
  • ¼ cup grated Parmesan cheese
  • ¼ cup chopped green onions (optional)
  • ¼ tsp garlic powder
  • Salt and pepper, to taste
  • ¼ cup all-purpose flour (or as needed for binding)
  • Oil or butter, for greasing muffin tin or pan

Directions

  1. Preheat Oven:
    Preheat oven to 400°F (200°C). Lightly grease a muffin tin or line with silicone cups.
  2. Mix the Filling:
    In a large bowl, combine mashed potatoes, egg, cheddar cheese, Parmesan, green onions, garlic powder, salt, and pepper. Mix until well combined.
  3. Add Flour:
    Stir in flour, a little at a time, until the mixture holds together and is scoopable (you may need a bit more or less depending on how wet your mashed potatoes are).
  4. Scoop into Muffin Tin:
    Spoon the mixture evenly into prepared muffin cups, pressing gently to pack them down a little.
  5. Bake:
    Bake for 25–30 minutes or until golden brown and crispy on the edges.
  6. Cool & Serve:
    Let cool for 5 minutes before removing from the tin. Serve warm with sour cream or your favorite dipping sauce!
