Ingredients
- 1 tablespoon olive oil
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 (15 oz) can chili beans (or kidney beans), undrained
- 1 (14.5 oz) can diced tomatoes
- 1 (8 oz) can tomato sauce
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper, to taste
- 4 cups Fritos corn chips
- 1½ cups shredded cheddar cheese
- Optional toppings: sour cream, jalapeños, chopped green onions, cilantro
Directions
- Cook the Beef:
In a large skillet or saucepan, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess grease if needed. - Sauté Aromatics:
Add diced onion and garlic to the pan. Sauté for 2–3 minutes until softened. - Add Beans & Tomatoes:
Stir in chili beans, diced tomatoes, and tomato sauce. Mix in chili powder, cumin, salt, and pepper. Simmer for 15–20 minutes, stirring occasionally. - Assemble Frito Pie:
In individual bowls or a baking dish, layer a bed of Fritos, ladle chili over the chips, and sprinkle generously with shredded cheese. - Melt & Serve:
