This Frito Pie is a Tex-Mex comfort food favorite—crunchy corn chips topped with savory chili and melty cheese. Perfect for game day, weeknight dinners, or anytime you’re craving something deliciously satisfying!

Ingredients

  • 1 tablespoon olive oil
  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (15 oz) can chili beans (or kidney beans), undrained
  • 1 (14.5 oz) can diced tomatoes
  • 1 (8 oz) can tomato sauce
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • 4 cups Fritos corn chips
  • 1½ cups shredded cheddar cheese
  • Optional toppings: sour cream, jalapeños, chopped green onions, cilantro

Directions

  1. Cook the Beef:
In a large skillet or saucepan, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess grease if needed.
  2. Sauté Aromatics:
Add diced onion and garlic to the pan. Sauté for 2–3 minutes until softened.
  3. Add Beans & Tomatoes:
Stir in chili beans, diced tomatoes, and tomato sauce. Mix in chili powder, cumin, salt, and pepper. Simmer for 15–20 minutes, stirring occasionally.
  4. Assemble Frito Pie:
In individual bowls or a baking dish, layer a bed of Fritos, ladle chili over the chips, and sprinkle generously with shredded cheese.
  5. Melt & Serve:
You can serve as-is or place under a broiler for 2–3 minutes to melt the cheese. Add your favorite toppings and enjoy!
