Ingredients:
For the Salmon Burgers:
- 1 lb skinless salmon fillet (finely chopped or pulsed in a food processor)
- 1/3 cup panko breadcrumbs
- 2 tbsp finely chopped red onion
- 1 tbsp chopped fresh parsley
- 1 tbsp Dijon mustard
- Zest of 1 lime
- Juice of 1/2 lime
- 1 garlic clove, minced
- Salt and pepper to taste

- 1 ripe avocado, diced
- 1 small tomato, diced
- 2 tbsp red onion, finely chopped

Directions:
- Make the salsa:

In a large bowl, mix the chopped salmon with breadcrumbs, red onion, parsley, Dijon, lime zest and juice, garlic, salt, and pepper until well combined. Form into 4 patties. - Cook the burgers:
Heat olive oil in a skillet over medium heat. Cook the patties for 3–4 minutes per side, or until golden and cooked through. - Assemble:
Serve salmon burgers on buns or in lettuce wraps. Top with a generous scoop of avocado salsa and greens if desired. Squeeze fresh lime over the top for an extra zesty punch!
