Fresh Cucumber, Onion, and Tomato Salad

A cool, tangy, and colorful salad made with garden-fresh ingredients — bursting with flavor and crunch in every bite!


Ingredients:

  • 2 cups cucumbers, thinly sliced
  • 1 ½ cups cherry tomatoes, halved (or diced regular tomatoes)
  • ½ small red onion, thinly sliced
  • 2 tbsp olive oil
  • 2 tbsp red wine vinegar (or apple cider vinegar)
  • 1 tsp sugar (optional, for balance)
  • Salt and black pepper, to taste
  • 1 tbsp fresh chopped dill or parsley (optional)

Directions:

  1. Prep the veggies:
    Slice cucumbers, tomatoes, and red onion. Place in a large mixing bowl.
  2. Make the dressing:
    In a small bowl, whisk together olive oil, vinegar, sugar, salt, and pepper until well combined.
  3. Toss the salad:
    Pour the dressing over the veggies. Toss gently until everything is coated.
  4. Chill & serve:
    Let the salad sit in the fridge for at least 20 minutes to allow the flavors to meld. Garnish with fresh herbs before serving.
