Classic Beef Stroganoff

Tender strips of beef and earthy mushrooms smothered in a rich, creamy sauce, served over egg noodles for the ultimate comfort meal.


Ingredients:

  • 1 lb beef sirloin or tenderloin, thinly sliced into strips
  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 8 oz mushrooms, sliced
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 ½ cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • ¾ cup sour cream
  • Salt & black pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Cooked egg noodles or rice, for serving

Directions:

  1. Cook the beef:
    Heat olive oil in a large skillet over medium-high heat. Add beef strips, season with salt and pepper, and sear until browned. Remove from pan and set aside.
  2. Sauté veggies:
    In the same skillet, add butter, onions, and mushrooms. Cook until softened and golden, about 5–6 minutes. Add garlic and cook another 30 seconds.
  3. Make the sauce:
    Sprinkle in flour and stir for 1–2 minutes until well blended. Gradually whisk in the beef broth. Add Worcestershire sauce and Dijon mustard. Simmer until slightly thickened.
  4. Bring it together:
    Lower heat, stir in sour cream, then return the beef (and its juices) to the pan. Simmer gently for 5 minutes until heated through. Do not boil.
  5. Serve:
    Spoon over egg noodles or rice. Garnish with fresh parsley.
