Tender strips of beef and earthy mushrooms smothered in a rich, creamy sauce, served over egg noodles for the ultimate comfort meal.
Ingredients:
- 1 lb beef sirloin or tenderloin, thinly sliced into strips
- 2 tbsp olive oil
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 8 oz mushrooms, sliced
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1 ½ cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- ¾ cup sour cream
- Salt & black pepper, to taste
- Fresh parsley, chopped (for garnish)
- Cooked egg noodles or rice, for serving
Directions:
- Cook the beef:
Heat olive oil in a large skillet over medium-high heat. Add beef strips, season with salt and pepper, and sear until browned. Remove from pan and set aside. - Sauté veggies:
In the same skillet, add butter, onions, and mushrooms. Cook until softened and golden, about 5–6 minutes. Add garlic and cook another 30 seconds. - Make the sauce:
Sprinkle in flour and stir for 1–2 minutes until well blended. Gradually whisk in the beef broth. Add Worcestershire sauce and Dijon mustard. Simmer until slightly thickened. - Bring it together:
Lower heat, stir in sour cream, then return the beef (and its juices) to the pan. Simmer gently for 5 minutes until heated through. Do not boil. - Serve:
Spoon over egg noodles or rice. Garnish with fresh parsley.
