Mexican Coleslaw

A tangy and crunchy slaw with a touch of heat and lime, perfect for pairing with grilled meats, tacos, or just as a standalone side dish!


Ingredients:

  • 4 cups shredded cabbage (green or purple, or a mix)
  • 1 large carrot, julienned or grated
  • 1/2 cup chopped red onion
  • 1/4 cup cilantro, chopped
  • 1/2 cup sour cream or Greek yogurt
  • 2 tbsp mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tbsp lime juice (freshly squeezed)
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp garlic powder
  • Salt and pepper to taste
  • 1/2 to 1 jalapeño, finely chopped (optional for heat)

Directions:

  1. Prepare the vegetables:
    In a large mixing bowl, combine the shredded cabbage, grated carrot, chopped red onion, and cilantro.
  2. Make the dressing:
    In a separate small bowl, whisk together the sour cream (or Greek yogurt), mayonnaise, apple cider vinegar, lime juice, chili powder, cumin, garlic powder, and salt and pepper to taste. If you like a little heat, add the chopped jalapeño to the dressing.
  3. Toss the slaw:
    Pour the dressing over the cabbage mixture and toss everything together until well coated. Taste and adjust seasoning with more salt, pepper, or lime juice if needed.
  4. Chill and serve:
    For the best flavor, let the coleslaw sit in the fridge for at least 30 minutes before serving to allow the flavors to meld. Serve as a refreshing side to tacos, grilled meats, or enjoy on its own!
