Goulash with Broccoli and Hawaiian Rolls

A hearty and comforting one-pot meal with savory ground beef, pasta, and vegetables, served alongside tender, sweet Hawaiian rolls. Perfect for a family dinner!


Ingredients:

For the Goulash:

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped (optional)
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (6 oz) tomato paste
  • 1 cup beef broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 2 cups elbow macaroni or your favorite pasta
  • 2 cups frozen broccoli florets
  • 1 cup shredded cheddar cheese (optional)

For the Hawaiian Rolls:

  • 1 pack of Hawaiian rolls (8-12 rolls, depending on the size of your family)

Directions:

For the Goulash:

  1. Brown the ground beef:
    In a large pot or Dutch oven, cook the ground beef over medium heat until browned, breaking it up into small pieces with a spoon. Drain any excess fat.
  2. Sauté onions and garlic:
    Add the chopped onion and minced garlic to the pot with the beef. Sauté for 2-3 minutes until the onion is softened and fragrant.
  3. Add tomatoes and seasonings:
    Stir in the diced tomatoes (with juices), tomato paste, beef broth, Italian seasoning, paprika, salt, and pepper. Bring the mixture to a simmer.
  4. Cook the pasta:
    Add the pasta to the pot and stir to combine. Cover and cook for 8-10 minutes, or until the pasta is tender and most of the liquid has been absorbed.
  5. Add broccoli:
    While the pasta is cooking, steam the broccoli florets in a separate pot or microwave until tender, about 3-4 minutes. Stir the cooked broccoli into the goulash mixture once the pasta is done. If desired, sprinkle with shredded cheddar cheese and stir until melted.

For the Hawaiian Rolls:

  1. Prepare the rolls:
    While the goulash is cooking, heat the Hawaiian rolls in the oven according to the package instructions (usually around 5-10 minutes at 350°F).
  2. Serve:
    Once everything is ready, serve the goulash with a warm, soft Hawaiian roll on the side. You can even use the rolls to scoop up the goulash if you like!
