Zesty Cuban Mojo Marinade

A vibrant, citrusy marinade that packs a punch of flavor—perfect for pork, chicken, or seafood. This Cuban-inspired mojo combines garlic, fresh citrus, and herbs for a bold and tangy taste that’s irresistible.

Ingredients:

  • 1/2 cup fresh orange juice (about 1–2 oranges)
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1/4 cup olive oil
  • 6–8 cloves garlic, minced or crushed
  • 1 tsp ground cumin
  • 1/2 tsp dried oregano
  • 1/4 tsp crushed red pepper flakes (optional, for heat)
  • 1/2 tsp salt, or to taste
  • 1/4 tsp black pepper
  • 2 tbsp fresh cilantro or parsley, chopped (optional for added freshness)

Directions:

  1. Combine ingredients:
In a bowl or jar, whisk together the orange juice, lime juice, and olive oil. Add the garlic, cumin, oregano, crushed red pepper (if using), salt, and pepper. Stir until well combined.
  2. Optional herb boost:
Stir in chopped cilantro or parsley for a fresh twist.
  3. Use as a marinade:
    • For meat (like pork shoulder or chicken thighs), marinate for 2–12 hours in the fridge.
    • For seafood, marinate for 30 minutes to 1 hour to avoid over-curing.
  4. Grill, roast, or sauté your marinated protein as desired—then serve with rice, black beans, or plantains for a full Cuban-style meal.

Prep Time: 10 minutes

Yields: About 3/4 cup of marinade

Calories: ~90 per 2-tbsp serving

Pro Tip: This marinade also works great as a finishing drizzle or dipping sauce—just reserve a portion before marinating meat to keep it food-safe.
