These rich, no-bake Coconut Chocolate Delights are the perfect combination of chewy coconut and smooth chocolate. They’re sweet, satisfying, and super easy to whip up—perfect for any occasion or an anytime treat!
Ingredients:
- 2 cups sweetened shredded coconut
- 1/2 cup sweetened condensed milk
- 1 tsp vanilla extract
- 1 1/2 cups semi-sweet chocolate chips
- 1 tbsp coconut oil (optional, for smoother chocolate)
Directions:
- Mix the coconut base:
In a medium bowl, combine the shredded coconut, sweetened condensed milk, and vanilla extract. Stir until evenly mixed. - Form the delights:
Scoop about 1 tablespoon of the mixture and shape into small mounds or balls. Place them on a parchment-lined tray. Freeze for about 15–20 minutes to firm up. - Melt the chocolate:
In a microwave-safe bowl, melt the chocolate chips and coconut oil (if using) in 30-second intervals, stirring between each, until smooth. - Dip in chocolate:
Use a fork to dip each coconut mound into the melted chocolate, coating completely. Tap off excess and place back on the tray. - Set and chill:
