Dark Chocolate Pumpkin Truffles

These rich and creamy truffles combine the cozy flavor of pumpkin spice with the indulgence of dark chocolate. Perfect for fall gatherings, gifting, or a sweet treat with coffee!

Ingredients:

  • 1/2 cup pumpkin purée (not pumpkin pie filling)
  • 1 1/2 cups graham cracker crumbs
  • 4 oz cream cheese, softened
  • 1 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • 10 oz dark chocolate chips or melting wafers
  • Optional: crushed graham crackers or sea salt for garnish

Directions:

  1. Make the pumpkin filling:
In a medium bowl, mix together the pumpkin purée, cream cheese, powdered sugar, vanilla, pumpkin pie spice, cinnamon, and salt until smooth.
  2. Add the crumbs:
Stir in the graham cracker crumbs until the mixture is thick and moldable. Chill the mixture for 30 minutes to firm up.
  3. Form the truffles:
Roll the mixture into small balls (about 1 inch in diameter) and place on a parchment-lined baking sheet. Freeze for 15–20 minutes.
  4. Melt the chocolate:
In a microwave-safe bowl, melt the dark chocolate in 30-second intervals, stirring between each until smooth.
  5. Dip and decorate:
Use a fork to dip each truffle into the melted chocolate, tapping off the excess. Place back on the parchment paper and sprinkle with crushed graham crackers or a tiny pinch of sea salt if desired.
  6. Set the truffles:
Chill in the fridge for 20–30 minutes until the chocolate hardens.
