Velvety Sweet Potato Swirl Pound Cake

This rich and moist pound cake blends sweet potato goodness with a buttery swirl of cinnamon and vanilla. Perfect for cozy fall days, holiday tables, or any time you want a slice of Southern comfort.


Ingredients:

For the Cake:

  • 1 cup mashed sweet potatoes (about 2 medium)
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 cup unsalted butter, softened
  • 2 1/2 cups granulated sugar
  • 4 large eggs
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 2 tsp vanilla extract

For the Swirl:

  • 1/3 cup brown sugar
  • 1 tsp cinnamon
  • Optional: 1/4 tsp ginger or clove

Directions:

  1. Prep the oven:
    Preheat your oven to 325°F (163°C). Grease and flour a bundt or tube pan.
  2. Make the swirl mix:
    In a small bowl, mix brown sugar, cinnamon, and optional spices. Set aside.
  3. Mix dry ingredients:
    In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. Cream the butter and sugar:
    In a large bowl, beat the butter and granulated sugar until light and fluffy, about 3–4 minutes.
  5. Add eggs and flavor:
    Beat in eggs one at a time, then mix in the sweet potatoes, sour cream, milk, and vanilla until well combined.
  6. Combine everything:
    Gradually mix the dry ingredients into the wet mixture until just combined. Don’t overmix.
  7. Layer and swirl:
    Pour half of the batter into the prepared pan. Sprinkle half of the cinnamon swirl mixture. Add the rest of the batter, then top with the remaining swirl. Use a knife to gently swirl through the batter.
  8. Bake it up:
    Bake for 60–70 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool and serve:
    Let the cake cool in the pan for 10–15 minutes before turning out onto a wire rack to cool completely.
