This rich and moist pound cake blends sweet potato goodness with a buttery swirl of cinnamon and vanilla. Perfect for cozy fall days, holiday tables, or any time you want a slice of Southern comfort.
Ingredients:
For the Cake:
- 1 cup mashed sweet potatoes (about 2 medium)
- 3 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 cup unsalted butter, softened
- 2 1/2 cups granulated sugar
- 4 large eggs
- 1/2 cup sour cream
- 1/2 cup milk
- 2 tsp vanilla extract
For the Swirl:
- 1/3 cup brown sugar
- 1 tsp cinnamon
- Optional: 1/4 tsp ginger or clove
Directions:
- Prep the oven:
Preheat your oven to 325°F (163°C). Grease and flour a bundt or tube pan. - Make the swirl mix:
In a small bowl, mix brown sugar, cinnamon, and optional spices. Set aside. - Mix dry ingredients:
In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg. - Cream the butter and sugar:
In a large bowl, beat the butter and granulated sugar until light and fluffy, about 3–4 minutes. - Add eggs and flavor:
Beat in eggs one at a time, then mix in the sweet potatoes, sour cream, milk, and vanilla until well combined. - Combine everything:
Gradually mix the dry ingredients into the wet mixture until just combined. Don’t overmix. - Layer and swirl:
Pour half of the batter into the prepared pan. Sprinkle half of the cinnamon swirl mixture. Add the rest of the batter, then top with the remaining swirl. Use a knife to gently swirl through the batter. - Bake it up:
Bake for 60–70 minutes, or until a toothpick inserted into the center comes out clean. - Cool and serve:
Let the cake cool in the pan for 10–15 minutes before turning out onto a wire rack to cool completely.
