Mouthwatering Filipino Pancit

A flavorful Filipino noodle stir-fry dish loaded with vegetables, savory meats, and a rich soy-based sauce. Perfect for celebrations or a comforting weeknight dinner!


Ingredients:

  • 8 oz pancit bihon (rice noodles)
  • 2 tablespoons oil (vegetable or canola)
  • 3 cloves garlic, minced
  • 1 small onion, sliced
  • 1 cup cooked chicken breast, shredded
  • ½ cup pork (optional), sliced thin
  • 1 cup shrimp, peeled and deveined
  • 2 cups cabbage, shredded
  • 1 cup carrots, julienned
  • ½ cup green beans, sliced
  • ¼ cup soy sauce
  • 1 tablespoon oyster sauce (optional for extra flavor)
  • 1 ½ cups chicken broth or water
  • Salt and pepper to taste
  • Calamansi or lemon wedges, for serving
  • Chopped green onions, for garnish

Directions:

  1. Soften the Noodles:
    • Soak pancit bihon noodles in warm water for 10–15 minutes, or until softened. Drain and set aside.
  2. Cook the Meats:
    • Heat oil in a large wok or skillet over medium heat. Sauté garlic and onion until fragrant.
    • Add pork and cook until browned. Add chicken and shrimp, cook until shrimp turns pink.
  3. Add the Veggies:
    • Toss in carrots, green beans, and cabbage. Stir-fry for 2–3 minutes until slightly tender.
  4. Flavor and Simmer:
    • Pour in soy sauce, oyster sauce (if using), and chicken broth. Let simmer for 2–3 minutes.
  5. Mix in the Noodles:
    • Add drained noodles into the pan. Toss everything together until noodles absorb the liquid and are evenly coated.
  6. Season and Garnish:
    • Add salt and pepper to taste. Garnish with green onions and serve with calamansi or lemon wedges on the side.
