Easiest No-Bake Cherry Cheesecake

A dreamy dessert that’s quick, creamy, and full of cherry goodness! This no-bake cherry cheesecake is perfect for when you want something sweet without turning on the oven.


Ingredients:

For the crust:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted

For the filling:

  • 2 (8 oz) packages cream cheese, softened
  • 1 (14 oz) can sweetened condensed milk
  • ¼ cup lemon juice
  • 1 teaspoon vanilla extract

For the topping:

  • 1 (21 oz) can cherry pie filling

Directions:

  1. Make the crust:
    • In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until well combined.
    • Press firmly into the bottom of a 9-inch springform pan or pie dish. Place in the fridge to set while you prepare the filling.
  2. Make the filling:
    • In a large bowl, beat the softened cream cheese until smooth and fluffy.
    • Slowly mix in sweetened condensed milk until combined and smooth.
    • Add lemon juice and vanilla extract, and beat until the mixture is creamy and well-blended.
  3. Assemble the cheesecake:
    • Pour the cream cheese mixture over the prepared crust and smooth the top.
    • Refrigerate for at least 4 hours, or until set (overnight is best for a firm texture).
  4. Add the cherry topping:
    • Once set, spoon cherry pie filling over the top before serving.
  5. Serve and enjoy:
    • Slice and serve chilled. Optional: add whipped cream or a sprinkle of graham crumbs on top!
