Chicken Fajita Casserole

All the bold, zesty flavors of sizzling fajitas packed into one cheesy, baked casserole dish. It’s an easy weeknight dinner the whole family will love!


Ingredients:

  • 2 tablespoons olive oil
  • 1 ½ pounds boneless, skinless chicken breasts, thinly sliced
  • 1 packet fajita seasoning mix
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish (optional)

Directions:

  1. Preheat oven:
    • Preheat your oven to 375°F (190°C).
  2. Cook chicken:
    • In a large skillet, heat olive oil over medium-high heat.
    • Add sliced chicken and fajita seasoning. Cook until browned and cooked through, about 6-8 minutes.
  3. Sauté vegetables:
    • Add sliced bell peppers and onions to the skillet. Cook for another 5 minutes until slightly softened.
  4. Mix the casserole:
    • In a large mixing bowl, combine cooked chicken and veggies with sour cream, garlic powder, salt, pepper, and half of both cheeses.
  5. Assemble and bake:
    • Pour mixture into a greased 9×13 inch baking dish.
    • Sprinkle remaining cheese evenly on top.
    • Bake for 20-25 minutes, or until bubbly and golden.
  6. Garnish and serve:
    • Let it cool for a few minutes, then garnish with chopped fresh cilantro.
    • Serve as-is or with rice, tortillas, or a salad.
