Ingredients:
For the Dough:
- 2¼ tsp active dry yeast (1 packet)
- ½ cup warm water (110°F)
- ¼ cup granulated sugar
- ¼ cup evaporated milk
- 1 egg
- ¼ tsp salt
- ¼ cup unsalted butter, melted
- 2½ cups all-purpose flour (plus more for kneading)
- Vegetable oil (for frying)
For the Glaze:
- 2 cups powdered sugar
- ¼ cup milk
- ½ tsp vanilla extract
Directions:
- Activate the yeast:
In a bowl, combine warm water and sugar. Stir in yeast and let sit for 5–10 minutes until frothy. - Make the dough:
Add egg, evaporated milk, melted butter, and salt to the yeast mixture. Stir in flour gradually until a soft dough forms. - Knead & rise:
Turn dough onto a floured surface. Knead for about 5–7 minutes. Place in a greased bowl, cover, and let rise in a warm spot for 1 hour or until doubled in size. - Roll & cut:
Punch down dough and roll out to ½-inch thickness. Cut using a doughnut cutter or two round cutters (one large, one small for the hole). Place on floured baking sheet. Let rise again for 30–40 minutes. - Fry time:
Heat oil in a deep fryer or pot to 350°F (175°C). Fry doughnuts 1–2 minutes per side until golden. Drain on paper towels. - Make the glaze:
Mix powdered sugar, milk, and vanilla until smooth. While doughnuts are still warm, dip the tops into the glaze and let set on a wire rack.
