Ingredients:
- ¾ cup all-purpose flour
- 2 tablespoons cornstarch
- ¼ teaspoon baking soda
- ¼ teaspoon baking powder
- ½ teaspoon salt
- ½ teaspoon sugar
- ½ cup cold water (plus more if needed)
- ¼ teaspoon onion powder (optional for extra flavor)
- Vegetable oil for frying
Directions:
- Prepare the batter:
- In a mixing bowl, whisk together flour, cornstarch, baking soda, baking powder, salt, sugar, and onion powder (if using).
- Gradually add cold water and mix until smooth. The batter should be slightly runny—like pancake batter.
- Heat the oil:
- Heat vegetable oil in a deep fryer or heavy skillet to 350–375°F (175–190°C).
- Dip & fry:
- Dip fish, shrimp, or veggies into the batter, allowing excess to drip off.
- Carefully place in hot oil and fry until golden brown and crispy (about 3–5 minutes depending on size).
- Fry in batches to avoid overcrowding.
- Drain:
- Remove with a slotted spoon and place on paper towels to drain.
- Serve hot:
- Best enjoyed immediately with tartar sauce, lemon wedges, or malt vinegar.
