Long John Silver’s Batter Recipe (Crispy Perfection!)

Recreate the famous crunchy coating from Long John Silver’s at home! This golden, crispy batter is perfect for fish, shrimp, or even vegetables.


Ingredients:

  • ¾ cup all-purpose flour
  • 2 tablespoons cornstarch
  • ¼ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon sugar
  • ½ cup cold water (plus more if needed)
  • ¼ teaspoon onion powder (optional for extra flavor)
  • Vegetable oil for frying

Directions:

  1. Prepare the batter:
    • In a mixing bowl, whisk together flour, cornstarch, baking soda, baking powder, salt, sugar, and onion powder (if using).
    • Gradually add cold water and mix until smooth. The batter should be slightly runny—like pancake batter.
  2. Heat the oil:
    • Heat vegetable oil in a deep fryer or heavy skillet to 350–375°F (175–190°C).
  3. Dip & fry:
    • Dip fish, shrimp, or veggies into the batter, allowing excess to drip off.
    • Carefully place in hot oil and fry until golden brown and crispy (about 3–5 minutes depending on size).
    • Fry in batches to avoid overcrowding.
  4. Drain:
    • Remove with a slotted spoon and place on paper towels to drain.
  5. Serve hot:
    • Best enjoyed immediately with tartar sauce, lemon wedges, or malt vinegar.
