Marinated Greek Lamb Chops with Mushrooms and Tomatoes

A flavorful, Mediterranean-inspired dish featuring tender marinated lamb chops, sautéed mushrooms, and juicy tomatoes, all cooked together for a satisfying and aromatic meal. Perfect for a dinner with a touch of elegance!


Ingredients:

  • 4 lamb chops
  • 2 tbsp olive oil
  • 3 tbsp lemon juice
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp ground cumin
  • Salt and pepper to taste
  • 1 tbsp fresh parsley, chopped (for garnish)

For the vegetables:

  • 1 cup mushrooms, sliced
  • 1 cup cherry tomatoes, halved
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1/4 tsp dried basil (optional)

Directions:

  1. Marinate the lamb chops:
    In a bowl, combine the olive oil, lemon juice, minced garlic, oregano, thyme, cumin, salt, and pepper. Place the lamb chops in a shallow dish or resealable plastic bag and pour the marinade over them. Massage the marinade into the meat and refrigerate for at least 30 minutes (preferably 2-3 hours for deeper flavor).
  2. Cook the lamb chops:
    Heat a grill pan or skillet over medium-high heat. Once hot, remove the lamb chops from the marinade and cook them for 4-5 minutes per side for medium-rare, or longer if you prefer a well-done cook. Once cooked to your liking, remove the lamb chops from the pan and let them rest for 5 minutes.
  3. Sauté the vegetables:
    In the same skillet, add 1 tablespoon of olive oil. Add the sliced mushrooms and cook for 3-4 minutes, or until they begin to soften. Add the cherry tomatoes, season with salt, pepper, and dried basil (if using), and sauté for an additional 2-3 minutes until the tomatoes soften and release their juices.
  4. Serve:
    Plate the lamb chops and spoon the sautéed mushrooms and tomatoes over the top. Garnish with fresh parsley for a burst of color and freshness.
