Rustic Campfire Beef and Potato Casserole

This hearty, no-fuss casserole is packed with seasoned ground beef, tender potatoes, and gooey cheese—perfect for cozy nights or feeding a hungry crowd. Whether baked in your oven or over a campfire, it’s comfort food at its best.


Ingredients:

  • 1 lb ground beef
  • 1 small onion, diced
  • 3 cups potatoes, thinly sliced (Yukon gold or russet work well)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk
  • 1 1/2 cups shredded cheddar cheese
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Directions:

  1. Preheat oven to 375°F (190°C) or prepare hot campfire coals.
  2. Cook beef and onion:
    In a skillet over medium heat, brown the ground beef with diced onion until fully cooked. Drain excess fat. Season with garlic powder, paprika, salt, and pepper.
  3. Mix sauce:
    In a bowl, whisk together the cream of mushroom soup and milk until smooth.
  4. Assemble casserole:
    In a greased 9×13 baking dish (or cast iron pan for campfire), layer half the sliced potatoes, then half the beef mixture, and pour over half the soup mixture. Repeat layers and top with shredded cheese.
  5. Bake:
    • Oven: Cover with foil and bake for 45 minutes. Remove foil and bake another 15–20 minutes until potatoes are tender and cheese is golden.
    • Campfire: Cover with foil and place on a grill over hot coals. Cook for 45–60 minutes, rotating occasionally for even cooking.
  6. Garnish:
    Sprinkle with chopped parsley before serving if desired.
