Rustic Campfire Beef and Potato Casserole

A cozy, hearty one-dish meal that brings the spirit of campfire cooking right to your kitchen! Layers of savory ground beef, seasoned potatoes, and melted cheese baked to perfection.


Ingredients:

  • 1 lb ground beef
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 4 medium potatoes, thinly sliced
  • 1 ½ cups shredded cheddar cheese
  • 1 can (10.5 oz) cream of mushroom soup
  • ½ cup milk
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • Chopped fresh parsley, for garnish (optional)

Directions:

  1. Preheat oven to 375°F (190°C).
    Grease a 9×13-inch baking dish or a large cast iron skillet.
  2. Cook the beef:
    In a skillet over medium heat, warm olive oil. Add chopped onion and garlic, cooking until softened. Add ground beef and cook until browned. Season with salt, pepper, and paprika. Drain excess grease.
  3. Prepare the sauce:
    In a bowl, whisk together the cream of mushroom soup and milk until smooth.
  4. Assemble the casserole:
    Layer half the sliced potatoes in the bottom of the baking dish. Spread half of the beef mixture on top. Pour half of the soup mixture over the beef, then sprinkle with ¾ cup of cheese. Repeat layers with remaining potatoes, beef, soup mixture, and cheese.
  5. Bake:
    Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 20–25 minutes, until potatoes are tender and the top is golden and bubbly.
  6. Garnish and serve:
    Sprinkle with fresh parsley before serving if desired.
