Ingredients:

  • 1 pound (450g) ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (8 ounces) tomato sauce
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (adjust for spice level)
  • Salt and black pepper to taste
  • Olive oil for cooking
  • Toppings: Shredded cheddar cheese, sour cream, chopped green onions, chopped fresh cilantro, sliced jalapeƱos (optional)

Instructions:

  1. In a large pot or Dutch oven, heat a drizzle of olive oil over medium-high heat. Add the chopped onion and cook for about 3-4 minutes, until it becomes translucent.
  2. Add the minced garlic and cook for an additional 30 seconds until fragrant.
  3. Add the ground beef to the pot and cook, breaking it apart with a spoon, until it’s browned and cooked through. Drain any excess fat if necessary.
  4. Stir in the diced red and green bell peppers and cook for another 2-3 minutes until they start to soften.
  5. Add the chili powder, ground cumin, paprika, cayenne pepper, salt, and black pepper to the pot. Stir well to coat the meat and vegetables with the spices.
  6. Pour in the diced tomatoes, tomato sauce, and beef broth. Stir to combine.
  7. Add the drained and rinsed kidney beans and black beans to the pot. Stir again to incorporate all the ingredients.
  8. Reduce the heat to low, cover the pot, and let the chili simmer for at least 30 minutes, stirring occasionally. The longer it simmers, the more the flavors will meld together.
  9. Taste the chili and adjust the seasoning if needed, adding more salt, pepper, or spices to taste.
  10. Serve the Homemade Mexican Beef Chili hot in bowls, garnished with your choice of toppings such as shredded cheddar cheese, sour cream, chopped green onions, chopped fresh cilantro, and sliced jalapeƱos if you want an extra kick.
