Pork Loin Roast Recipe

A pork loin roast is a delicious and versatile dish that’s perfect for a family dinner or special occasion. Here’s a classic recipe for a flavorful pork loin roast:

Ingredients:

  • 3 to 4 pounds boneless pork loin roast
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
  • 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)
  • Salt and freshly ground black pepper, to taste
  • 1 cup chicken or vegetable broth
  • 1/2 cup dry white wine (optional)
  • 1 onion, sliced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, combine the minced garlic, chopped rosemary, chopped thyme, salt, and black pepper. Add the olive oil and mix to create a herb and garlic paste.
  3. Place the pork loin roast on a cutting board, and using a sharp knife, make shallow slits or cuts all over the surface of the roast. This allows the herb and garlic paste to penetrate and flavor the meat.
  4. Rub the herb and garlic paste evenly over the entire surface of the pork loin roast.
  5. In a large, oven-safe skillet or roasting pan, heat a bit of olive oil over medium-high heat. Add the sliced onions, carrots, and celery, and sauté for a few minutes until they begin to soften and develop some color.
  6. Push the vegetables to the sides of the skillet or roasting pan, and place the seasoned pork loin roast in the center.
  7. Sear the pork loin on all sides until it’s nicely browned. This step helps to seal in the juices and develop flavor.
  8. Once the pork loin is browned, pour the chicken or vegetable broth and white wine (if using) over the roast and vegetables. This will help keep the meat moist and add flavor.
  9. Transfer the skillet or roasting pan to the preheated oven and roast the pork loin for about 45 minutes to 1 hour, or until it reaches an internal temperature of 145°F (63°C). Use a meat thermometer to check the temperature in the thickest part of the roast.
  10. Remove the pork loin from the oven, cover it loosely with aluminum foil, and let it rest for about 10-15 minutes. This resting period allows the juices to redistribute, resulting in a juicier roast.
