Seafood Mac and Cheese
Ingredients:
- 2 cups dry macaroni
- 6 oz claw crab meat
- 8 oz shrimp, peeled and deveined
- 8 oz sour cream
- 4 tablespoons butter
- 2 tablespoons flour
- 1 spring onion, finely chopped
- 1 can evaporated milk
- 8 oz block sharp white cheddar cheese, grated
- 4 oz block mozzarella cheese, grated
- ¼ cup panko bread crumbs
- Salt and black pepper, to taste
Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C).
- Prepare Macaroni: Cook the macaroni according to package directions. Drain well and place in a large mixing bowl.
- Prepare Seafood: Peel and devein the shrimp if needed. Lightly cook the shrimp in a skillet with melted butter until just done. Remove from the pan, chop slightly when cooled, and add to the macaroni mixture.
- Mix Macaroni: To the cooked macaroni, add sour cream and stir until all noodles are coated. Then, add the crab meat and stir well to combine.

- Assemble and Bake: Transfer the mixture into a well-buttered baking dish. Sprinkle the top with grated mozzarella cheese, panko bread crumbs, and a light dusting of paprika for color.
- Bake: Bake in the preheated oven for 20-25 minutes, or until the top is lightly browned and the cheese is bubbly.
