KIELBASA SOUP WITH POTATOES !!

Preparation:

  1. In a large stockpot, melt the butter over medium-high heat. Add the sliced kielbasa, chopped onion, and celery to the pot.
  2. Season the mixture with salt, pepper, garlic powder, and paprika. Cook for 6-8 minutes, stirring occasionally, until the vegetables are softened and the kielbasa is browned.
  3. Add the cubed potatoes to the pot and pour in the chicken broth. Bring the mixture to a boil, then reduce the heat to medium-low.
  4. Simmer the soup for 10 minutes, or until the potatoes are tender and cooked through. Optionally, lightly mash some of the potatoes with a masher to thicken the soup.
  1. Stir in the half-and-half, cubed Velveeta cheese, and beer. Continue to cook the soup for an additional 10-15 minutes, stirring occasionally, until the cheese is melted and smooth.
  2. Taste and adjust the seasoning as needed with salt and pepper.
  3. Ladle the Kielbasa Soup with Potatoes into bowls and serve hot. Enjoy the comforting flavors of this delicious soup!
