Chocolate Covered Peanut Butter Balls Recipe
Ingredients:
- 1 1/2 cups creamy peanut butter
- 1/2 cup softened butter
- 1 teaspoon vanilla extract
- 3 cups powdered sugar
- 12 oz bag of chocolate chips
- 2 tablespoons shortening
Instructions:
- Line a baking sheet with waxed paper and set aside.
- In a large bowl, mix peanut butter, softened butter, and vanilla extract together until well combined.
- Slowly add one cup of powdered sugar at a time to the peanut butter mixture, mixing well after each addition.
- Note: The mixture may become difficult to stir with a spoon after adding the third cup of powdered sugar. Use your hands to mix until all the powdered sugar is fully incorporated.
- Pinch off small amounts of the mixture and roll between your hands to form small balls. Place the peanut butter balls on the prepared baking sheet.
- In a double boiler or a heatproof bowl set over a saucepan of simmering water, melt the chocolate chips with the shortening, stirring until smooth.
- Using a fork, dip each peanut butter ball into the melted chocolate, ensuring it is completely coated. Lift the coated ball out of the chocolate with the fork, allowing any excess chocolate to drip off.
- Place the chocolate-covered peanut butter balls back onto the waxed paper-lined baking sheet.
- Once all the peanut butter balls are coated in chocolate, refrigerate the baking sheet for 15-30 minutes, or until the chocolate coating is completely hardened.
