Old Fashioned Goulash
Ingredients:
- 1.5 pounds beef stew meat, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 cups diced tomatoes (canned or fresh)
- 2 cups beef broth
- 2 tablespoons tomato paste
- 2 teaspoons paprika
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups elbow macaroni or other small pasta
- Chopped fresh parsley, for garnish (optional)
Instructions:
- Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the beef stew meat and cook until browned on all sides. Remove the meat from the pot and set it aside.
- In the same pot, add the diced onion, minced garlic, and diced bell peppers. Sauté for about 5 minutes until the vegetables have softened.
- Return the browned beef stew meat to the pot. Add the diced tomatoes, beef broth, tomato paste, paprika, dried oregano, dried basil, salt, and black pepper. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 1.5 to 2 hours, or until the beef is tender and the flavors have melded together. Stir occasionally.
- After the goulash has simmered, add the elbow macaroni or other small pasta to the pot. Stir well to incorporate the pasta into the mixture.
- Cover the pot again and simmer for an additional 10-12 minutes, or until the pasta is cooked to your desired tenderness, stirring occasionally.
- Remove the pot from the heat. Let the goulash sit for a few minutes to thicken before serving.
- Garnish with chopped fresh parsley, if desired, before serving.
- Serve the Old Fashioned Goulash hot and enjoy the comforting flavors and tender beef alongside the flavorful vegetables and pasta.
