The Easiest Peach Dumplings
Ingredients:
- 2 cans (15 oz each) canned peaches, drained
- 2 packages (8 ounces each) refrigerated crescent roll dough
- 1 cup (2 sticks) unsalted butter
- 2/3 cup granulated sugar
- 2/3 cup brown sugar
- 3 teaspoons cinnamon
- 1 1/2 cups citrus soda (such as Sprite, Mountain Dew, 7 Up, or Fresca)
- Vanilla ice cream, for serving
Preparation:
- Preheat the oven to 350 degrees F (175 degrees C). Grease an 8×8 baking dish with nonstick cooking spray.
- Open the cans of peaches and drain them. Set aside.
- Unroll the refrigerated crescent roll dough and separate it into triangles.
- Place one or two peach slices (depending on size) at the wide end of each dough triangle. Sprinkle a pinch of cinnamon over the peaches, then roll the dough around the peaches.
- Transfer each filled dumpling to the greased baking dish. Repeat with the remaining dough and peaches.
- In a large bowl, melt the butter. Add the granulated sugar, brown sugar, and remaining cinnamon to the melted butter. Stir until well combined and smooth.
- Pour the butter mixture over the dumplings in the baking dish, using a large spoon to evenly distribute it.
- Carefully pour the citrus soda around the dumplings in the baking dish, avoiding pouring it directly over the tops of the dumplings to maintain a crispy crust.
- Bake the peach dumplings in the preheated oven for 30-35 minutes, or until the dough is golden brown on top.
- Remove from the oven and let cool slightly. Serve warm with vanilla ice cream on top.
