The Easiest Peach Dumplings

Ingredients:

  • 2 cans (15 oz each) canned peaches, drained
  • 2 packages (8 ounces each) refrigerated crescent roll dough
  • 1 cup (2 sticks) unsalted butter
  • 2/3 cup granulated sugar
  • 2/3 cup brown sugar
  • 3 teaspoons cinnamon
  • 1 1/2 cups citrus soda (such as Sprite, Mountain Dew, 7 Up, or Fresca)
  • Vanilla ice cream, for serving

Preparation:

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease an 8×8 baking dish with nonstick cooking spray.
  2. Open the cans of peaches and drain them. Set aside.
  3. Unroll the refrigerated crescent roll dough and separate it into triangles.
  4. Place one or two peach slices (depending on size) at the wide end of each dough triangle. Sprinkle a pinch of cinnamon over the peaches, then roll the dough around the peaches.
  5. Transfer each filled dumpling to the greased baking dish. Repeat with the remaining dough and peaches.
  6. In a large bowl, melt the butter. Add the granulated sugar, brown sugar, and remaining cinnamon to the melted butter. Stir until well combined and smooth.
  7. Pour the butter mixture over the dumplings in the baking dish, using a large spoon to evenly distribute it.
  8. Carefully pour the citrus soda around the dumplings in the baking dish, avoiding pouring it directly over the tops of the dumplings to maintain a crispy crust.
  9. Bake the peach dumplings in the preheated oven for 30-35 minutes, or until the dough is golden brown on top.
  10. Remove from the oven and let cool slightly. Serve warm with vanilla ice cream on top.
