Slow Cooker BBQ Ribs

These slow cooker ribs are a surefire crowd-pleaser

Ingredients:

  • 3 pounds pork side ribs (about 2 racks)
  • 2 (12-ounce) cans of root beer
  • 2 cups barbecue sauce
  • 1 teaspoon each of salt and pepper

Instructions:

  1. Remove the silver skin from the back of the ribs. You can use the back of a spoon to slide underneath and then peel it off using your fingers.
  2. Season the ribs with salt and pepper.
  3. Lay the seasoned ribs in a 6-quart slow cooker in a single layer.
  4. Pour the root beer over the ribs.
  5. Cook the ribs on low for 5 hours or on high for 3 hours.
  6. Once the ribs are cooked, remove them from the slow cooker and discard the liquid.
  7. Return the ribs to the slow cooker and coat them thoroughly with barbecue sauce.
  8. Cook the ribs on high for another hour to allow the barbecue sauce to caramelize and create a sticky glaze.
  9. Carefully transfer the ribs to a serving plate and serve with extra barbecue sauce on the side.
