Smashing Patty with Confidential Sauce

Here’s the recipe for Smashing Patty with Confidential Sauce:

Ingredients:

  • 1 tablespoon olive oil
  • 2 cups finely sliced onion (from 1 large onion)
  • 6 tablespoons unsalted butter, divided
  • Garlic powder and kosher salt
  • 2 tablespoons ketchup
  • 1 1/2 pounds lean ground beef
  • 2 teaspoons Worcestershire sauce
  • 8 slices rye bread
  • 1/2 teaspoon onion powder
  • 8 ounces Swiss cheese, sliced

Preparation:

  1. Heat olive oil in a large pan over medium-low heat. Add the sliced onions and caramelize them by cooking for 20-25 minutes, stirring regularly, until they are very brown. Season with salt and pepper to taste.
  2. While the onions are caramelizing, heat a cast-iron skillet over medium-high heat. Melt 2 tablespoons of butter in the skillet.
  3. In a large bowl, mix together the ground beef, ketchup, Worcestershire sauce, onion powder, 1 teaspoon of salt, and a pinch of pepper. Divide the mixture into four equal patties and shape them into circles slightly wider than the bread slices.
  4. Cook the patties in the heated skillet for 4-5 minutes on each side, until browned. Remove from the skillet and set aside.
  1. To assemble the patty melts, remove any excess grease from the skillet and melt 2 tablespoons of the remaining butter. Place four slices of rye bread in the skillet, buttered side down. Top each slice with a burger patty, Swiss cheese, half of the caramelized onions, and another slice of cheese. Place the remaining four slices of bread on top, buttered side up.
  2. Cook the patty melts in the skillet for 2-4 minutes on each side, pressing down gently with a spatula occasionally, until golden brown and the cheese is melted.
  3. Once the patty melts are cooked, transfer them to a cutting board and cut them diagonally.
