Ingredients:

  • 3 cups zucchini, sliced
  • 1 small onion, chopped
  • 1 cup baking mix (such as biscuit mix)
  • 3 eggs
  • 1 cup shredded Parmesan cheese
  • 1/2 cup oil
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley, finely chopped

Instructions:

  1. Preheat your oven to 375°F (190°C) and grease a 9-inch pie dish.
  2. In a large bowl, whisk together the eggs, shredded Parmesan cheese, oil, minced garlic, chopped parsley, salt, and pepper until well combined.
  3. Stir in the sliced zucchini and chopped onion into the egg mixture until evenly coated.
