  • 6 beef blade steaks
  • 1 onion, sliced
  • 8 ounces fresh mushrooms, thinly sliced
  • 3/4 cup chicken broth
  • 1/2 cup cream
  • 1/4 cup dry sherry
  • 1/4 cup all-purpose flour
  • 4 tablespoons oil
  • Salt and pepper, to taste
  • 1 tablespoon minced fresh thyme
  • 1 1/2 teaspoons mild paprika
  • 2 tablespoons chopped fresh parsley

Instructions:

  1. Heat 2 tablespoons of oil in a skillet over medium-high heat. Season the beef steaks with salt and pepper, then brown them on both sides. Transfer the browned steaks to the slow cooker.
  2. In the same skillet, add the remaining oil and sauté the mushrooms and onions until tender. Add the minced thyme and paprika, cooking for an additional minute.
  3. Transfer the mushroom and onion mixture to the slow cooker over the steaks.
  4. In a bowl, whisk together the chicken stock, dry sherry, and flour until smooth. Pour this mixture over the beef and mushrooms in the slow cooker.
  5. Cover and cook on low for 6-8 hours or on high for 4-5 hours, until the beef is tender.
  6. Once the beef is tender, remove the steaks from the slow cooker and stir the chopped parsley and cream into the sauce in the slow cooker. Return the steaks to the slow cooker, coating them in the sauce.
  1. Cook on low for an additional 10 minutes to allow the flavors to meld together.
  2. Serve the Swiss steak with rice, mashed potatoes, or your favorite sides, and enjoy this delightful meal!
