Ingredients :
For the fried shrimp:
- 500 g (1 lb) raw shrimp, peeled (tail on or off)
- 1 cup (125 g) all-purpose flour
- 1/2 cup (60 g) cornstarch
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 2 eggs
- 1 cup (240 ml) milk
- Vegetable oil (for frying)
For the spicy sauce:
- 1/4 cup (60 ml) mayonnaise
- 2 tablespoons sweet chili sauce
- 1 teaspoon Sriracha sauce (adjust to taste)
- 1 teaspoon lemon juice
- A pinch of smoked paprika
Directions :
Prepare the fried shrimp:
- Rinse the shrimp under cold water and pat dry with paper towels.
- In a bowl, combine the flour, cornstarch, salt, pepper, paprika, and garlic powder.
- In another bowl, whisk the eggs with the milk.
- Dip each shrimp into the flour mixture, then into the egg mixture, and back into the flour mixture. Shake off any excess.
- Heat the vegetable oil in a deep pan or fryer to 180°C (350°F).
Cook the shrimp:
6. Fry the shrimp in small batches for 2–3 minutes or until golden brown and crispy. Drain on paper towels.
Prepare the spicy sauce:
7. In a bowl, mix all the sauce ingredients until smooth. Adjust the spice level to your liking.
Serve:
8. Arrange the fried shrimp on a platter and serve with the spicy dipping sauce on the side. Enjoy while hot!
