Sausage and Vegetable Stew

This comforting Sausage and Vegetable Stew, a classic French dish, features hearty vegetables and savory sausages simmered together for a flavorful, warming meal.

Ingredients:

  • 4 large sausages (e.g., smoked, kielbasa, or Toulouse)
  • 1 lb (450 g) potatoes, peeled and cut into chunks
  • 4 carrots, peeled and sliced
  • 1 small cabbage, cut into wedges
  • 2 leeks, cleaned and sliced
  • 2 celery stalks, chopped
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups (1 liter) chicken or vegetable stock
  • 1 bouquet garni (a bundle of fresh herbs: thyme, bay leaf, parsley)
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish

Directions:

  1. Brown the sausages:
    Heat olive oil in a large pot over medium heat. Add the sausages and cook until browned on all sides, about 5 minutes. Remove and set aside.
  2. Sauté the aromatics:
    In the same pot, add the onion, garlic, leeks, and celery. Cook until softened, about 5 minutes.
  3. Add vegetables and stock:
    Add the carrots, potatoes, cabbage, and bouquet garni. Pour in the stock, ensuring the vegetables are just covered. Season with salt and pepper.
  4. Simmer the stew:
    Return the sausages to the pot. Cover and simmer over low heat for 30-40 minutes, or until the vegetables are tender.
  5. Adjust seasoning and serve:
    Remove the bouquet garni. Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley.
