Old-Fashioned Sweet Potato Casserole

Ingredients:

For the Sweet Potato Filling:

  • 4 cups mashed sweet potatoes (about 4 large sweet potatoes)
  • ½ cup granulated sugar
  • 2 large eggs
  • ½ cup unsalted butter, melted
  • ½ cup whole milk
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon (optional)

For the Pecan Streusel Topping:

  • ½ cup all-purpose flour
  • ½ cup brown sugar
  • 1 cup chopped pecans
  • 4 tablespoons unsalted butter, melted

Directions:

  1. Prepare the Sweet Potatoes:
    • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
    • Peel and boil sweet potatoes until tender. Mash them and measure 4 cups.
  2. Make the Filling:
    • In a large bowl, mix mashed sweet potatoes with sugar, eggs, melted butter, milk, vanilla extract, and cinnamon (if using) until smooth.
    • Spread the mixture evenly into the prepared baking dish.
  3. Make the Streusel Topping:
    • In a medium bowl, combine flour, brown sugar, and chopped pecans. Add melted butter and mix until crumbly.
