Ingredients:
- 1 1/2 cups warm water (110°F or 45°C)
- 2 1/4 teaspoons active dry yeast
- 1 teaspoon salt
- 1 tablespoon sugar
- 4 cups all-purpose flour
- 2/3 cup baking soda
- 10 cups water
- 4 tablespoons unsalted butter, melted
- Coarse salt for topping
Directions:
- In a large bowl, combine warm water, yeast, and sugar. Let sit for 5 minutes until foamy.
- Stir in salt and gradually add the flour, 1 cup at a time, until a dough forms. Knead the dough on a floured surface for 5-7 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a towel, and let rise for 1 hour or until doubled in size.
- Preheat the oven to 450°F (230°C) and line two baking sheets with parchment paper.
- In a large pot, bring 10 cups of water to a boil and add the baking soda.
- Punch down the dough and divide it into small pieces. Roll each piece into a ball or a small rope and cut into bite-sized pieces.
- Drop the dough bites into the boiling baking soda water for 20-30 seconds. Remove with a slotted spoon and place on the prepared baking sheets.
- Brush the pretzel bites with melted butter and sprinkle with coarse salt.
- Bake for 10-12 minutes or until golden brown.
- Serve warm with your favorite dipping sauces like cheese or mustard. Enjoy!
