High-Protein Egg White Bites

Fuel your day with these high-protein egg white bites! They’re packed with nutrients, low in calories, and perfect for breakfast or a snack on the go.

Ingredients:

  • 1 cup egg whites (about 8 large eggs worth)
  • 1/4 cup diced bell peppers
  • 1/4 cup chopped spinach or kale
  • 1/4 cup diced onions
  • 1/4 cup shredded low-fat cheese (optional)
  • Salt and pepper to taste
  • Non-stick cooking spray

Directions:

  1. Preheat your oven to 375°F (190°C) and lightly spray a muffin tin with non-stick cooking spray.
  2. In a mixing bowl, whisk the egg whites until slightly frothy.
  3. Add the diced bell peppers, chopped spinach or kale, onions, shredded cheese (if using), salt, and pepper. Mix until well combined.
  4. Pour the mixture evenly into the muffin tin, filling each cup about 3/4 full.
  5. Bake in the preheated oven for 18-20 minutes, or until the egg white bites are set and lightly golden on top.
  6. Let the bites cool for a few minutes before removing them from the tin.
  7. Serve immediately or store in an airtight container in the fridge for up to 5 days.
