Ingredients:
- 1 cup egg whites (about 8 large eggs worth)
- 1/4 cup diced bell peppers
- 1/4 cup chopped spinach or kale
- 1/4 cup diced onions
- 1/4 cup shredded low-fat cheese (optional)
- Salt and pepper to taste
- Non-stick cooking spray
Directions:
- Preheat your oven to 375°F (190°C) and lightly spray a muffin tin with non-stick cooking spray.
- In a mixing bowl, whisk the egg whites until slightly frothy.
