S’mores Energy Bites

Enjoy the nostalgic flavors of s’mores in a quick and healthy energy bite! These no-bake treats are packed with chocolate, graham crackers, and marshmallow goodness.

Ingredients:

  • 1 cup rolled oats
  • 1/4 cup graham cracker crumbs
  • 1/4 cup mini chocolate chips
  • 2 tablespoons mini marshmallows
  • 1/3 cup creamy peanut butter or almond butter
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract

Directions:

  1. In a large mixing bowl, combine the rolled oats, graham cracker crumbs, mini chocolate chips, and mini marshmallows.
  2. Add the peanut butter (or almond butter), honey (or maple syrup), and vanilla extract. Mix until all ingredients are evenly combined.
  3. Scoop out tablespoon-sized portions of the mixture and roll them into bite-sized balls.
  4. Place the energy bites on a parchment-lined tray and refrigerate for 20-30 minutes to firm up.
  5. Store in an airtight container in the refrigerator for up to a week.
