Soft and Spiced Gingerbread Crinkle Cookies

Ingredients:

  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup molasses
  • 1 large egg
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1/2 cup powdered sugar

Directions:

  1. In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
  2. Beat in the molasses and egg until fully combined.
  3. In a separate bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Cover and chill the dough for at least 1 hour.
  5. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  6. Scoop out tablespoon-sized portions of dough, roll into balls, and coat each ball in powdered sugar.
  7. Place the coated dough balls on the prepared baking sheets, about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are set and the tops have crinkled.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
