Ingredients:

  • 1 cup fresh or frozen fruit (e.g., strawberries, blueberries, or mango)
  • 1/2 cup pureed vegetables (e.g., carrots, spinach, or beets)
  • 2-3 tablespoons honey or maple syrup (optional, for sweetness)
  • 2 tablespoons lemon juice
  • 3 tablespoons unflavored gelatin

Directions:

  1. In a blender, combine the fruit, vegetable puree, and lemon juice. Blend until smooth.
  2. Pour the mixture into a small saucepan and heat over low-medium heat. Add honey or maple syrup if desired for sweetness.
  3. Gradually whisk in the gelatin, ensuring no clumps form. Continue stirring until the gelatin is fully dissolved and the mixture is smooth.
  4. Remove from heat and carefully pour the mixture into silicone molds or a shallow baking dish.
  5. Refrigerate for 2-3 hours or until firm.
  6. If using a baking dish, cut into bite-sized squares. Store in an airtight container in the refrigerator for up to one week.
