Ingredients:
- 1 ½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tbsp fresh lemon zest
- 2 tbsp fresh lemon juice
- ½ cup milk
- 1 cup fresh or frozen blueberries (tossed in 1 tbsp flour)
For the Lemon Glaze:
- ½ cup powdered sugar
- 1-2 tbsp fresh lemon juice
Directions:
- Preheat the oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Beat in the eggs, one at a time, followed by the lemon zest and juice.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, starting and ending with the dry mixture. Mix until just combined.
- Gently fold in the flour-coated blueberries to prevent them from sinking during baking.
- Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Prepare the glaze by mixing powdered sugar with lemon juice until smooth. Drizzle over the cooled bread.
