Lemon Blueberry Bread

Bright, tangy, and bursting with juicy blueberries, this Lemon Blueberry Bread is a delightful treat perfect for breakfast, dessert, or a sweet snack!

Ingredients:

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tbsp fresh lemon zest
  • 2 tbsp fresh lemon juice
  • ½ cup milk
  • 1 cup fresh or frozen blueberries (tossed in 1 tbsp flour)

For the Lemon Glaze:

  • ½ cup powdered sugar
  • 1-2 tbsp fresh lemon juice

Directions:

  1. Preheat the oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  4. Beat in the eggs, one at a time, followed by the lemon zest and juice.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, starting and ending with the dry mixture. Mix until just combined.
  6. Gently fold in the flour-coated blueberries to prevent them from sinking during baking.
  7. Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  9. Prepare the glaze by mixing powdered sugar with lemon juice until smooth. Drizzle over the cooled bread.
  10. Slice, serve, and enjoy the zesty, berry-filled goodness!
