Teriyaki Shrimp and Pineapple Rice Stack

A colorful, flavor-packed dish stacked high with juicy shrimp, sweet pineapple, and sticky teriyaki rice. It’s vibrant, satisfying, and surprisingly easy to make—a restaurant-style meal right at home!


Ingredients

For the Teriyaki Shrimp:

  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1/4 cup teriyaki sauce (store-bought or homemade)
  • 1 tsp garlic, minced
  • 1 tsp ginger, minced

For the Pineapple Rice:

  • 2 cups cooked jasmine rice
  • 1 cup fresh pineapple, diced
  • 2 green onions, sliced
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • Optional: pinch of chili flakes for heat

For Garnish (optional):

  • Toasted sesame seeds
  • Extra teriyaki drizzle
  • Chopped cilantro or parsley

Directions

  1. Marinate the shrimp:
    In a bowl, toss shrimp with teriyaki sauce, garlic, and ginger. Let sit for 10–15 minutes while prepping other ingredients.
  2. Make pineapple rice:
    In a large skillet over medium heat, add sesame oil. Toss in pineapple and sauté for 2–3 minutes. Stir in rice, soy sauce, green onions, and chili flakes. Mix well and heat through. Set aside.
  3. Cook shrimp:
    Heat olive oil in a pan over medium-high heat. Add marinated shrimp and cook 2–3 minutes per side until pink and cooked through.
  4. Assemble the stack:
    Use a food ring mold or a small bowl to layer the rice on a plate. Top with a generous helping of shrimp.
  5. Finish & serve:
    Garnish with sesame seeds, a drizzle of teriyaki sauce, and fresh herbs. Serve warm!
