Easy Pecan Pie Bars

Ingredients

For the crust:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, cold and cubed

For the filling:

  • 1 cup light corn syrup
  • 1/2 cup packed brown sugar
  • 1/2 cup unsalted butter, melted
  • 3 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 2 cups pecan halves (or chopped if you prefer)

Directions

  1. Preheat the oven:
    Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or lightly grease it.
  2. Make the crust:
    In a medium bowl, combine the flour, sugar, and salt. Add the cold, cubed butter and cut it into the flour mixture using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Press the mixture evenly into the prepared baking pan to form the crust. Bake for 15-20 minutes, or until lightly golden. Remove from the oven and set aside.
  3. Prepare the filling:
    In a large bowl, whisk together the corn syrup, brown sugar, melted butter, eggs, and vanilla extract until smooth and well combined. Stir in the pecans.
  4. Assemble the bars:
    Pour the pecan filling over the baked crust. Spread it evenly with a spatula.
  5. Bake:
    Return the pan to the oven and bake for an additional 30-35 minutes, or until the filling is set and golden brown. The center should be firm to the touch.
  6. Cool and slice:
    Allow the bars to cool completely in the pan on a wire rack before cutting them into squares.
